New York Pizza Sauce Seasoning
Sure most of us love a good pizza and there can always be a great debate on what's better - Chicago Style Deep Dish or a Classic New York by-the-slice pie. Now while we love a great pizza we don't live close enough to either of these great cities to grab one on a Friday night on the way home from work.
So what's the next best thing… make a homemade pizza that your friends and family will go nuts over. Now what's more important? Is it the crust, the toppings or the sauce? For my money while I think that the crust and the toppings are important the real secret is in the sauce. The key to great NY-style sauce is to achieve the perfect balance between acidity, heat, sweetness and a noticeable herbal base with a texture that's thick enough to keep your pizza from getting soggy but still thin enough to spread.
Now most of the pizza sauce seasoning recipes you'll find online will talk about using some version of Italian Seasoning which is fine and we also offer a nice basic pizza seasoning but for this New York Pizza Sauce Seasoning we wanted something authentic and a bit more robust. We worked with the owner of an old school family run pizza shop in New York that wanted us to blend his pizza sauce seasoning as he was opening a second location and this was easier for him than making larger quantities at the original shop.
Now while many of us prefer using fresh herbs over dried herbs when possible our pizza guy prefers using dried herbs in his classic pizza sauce. Because savory herbs tend to grow in dry relatively hot climates they remain relatively stable at high temperatures as the real flavor is contained deep inside the leaf.
Now for a classic Italian Seasoning you'll find the dried herbs used are considered cut and sifted. The key to the herbs used in this pizza sauce blend is that some of them are ground. This is especially critical with the ground thyme and ground rosemary as when using these in the normal dried state they tend to create more flavor explosions which makes the sauce less smooth.
Our New York Pizza Sauce Seasoning is hand blended from basil, marjoram, savory, ground rosemary, ground thyme, sage, oregano and parsley.
