This cornerstone of Tex-Mex chili is much beloved and much debated about. Chili has a life of its own and comes in a wide range of flavors and styles. Food historians believe it originated in San Antonio, Texas, but it’s taken on different characteristics as it’s travelled across America from region to region, or even from house to house.
