Ground Ceylon Cinnamon, Cinnamomum zeylanicum or alternatively Cinnamomum verum, is a ground, sweet cinnamon that originated on the island nation of Sri Lanka. Ground Ceylon cinnamon is also referred to as Ceylon cinnamon ground, Ceylon cinnamon powder, or canela. It is also called “true cinnamon”, but that is a misnomer since all Ceylon and Cassia cinnamons are, in fact, true cinnamons. 

Ground Ceylon Cinnamon comes from the inner bark of a laurel tree native to Sri Lanka. This bark is thinner and a bit more brittle than that which comes from cassia cinnamons, and the flavor is sweet, delicate, and floral.

Flavor Profile

Ground Ceylon Cinnamon has a warm, sweet, woody flavor with notes of citrus and cloves and gentle floral top notes.

 

How To Use

Ceylon Cinnamon is the preferred cinnamon in Central American, Mexican, South American, and South Asian cuisine. This cinnamon works best in recipes where there are not a lot of competing flavors, as it is delicate and nuanced, though there are some notable exceptions. Try it in a rich and healthy Velvety Quinoa Pudding or a cozy cup of Masala Chai. Dress up your festive meals with a cinnamon-spiked Apple and Cranberry Sauce, or do up some Pickled Blueberries with cinnamon and allspice and toss them over cheesecake or goat cheese. Go savory with Mole Poblano or add a half-teaspoon to your favorite Indian curry, like Vegetable Jalfrezi.

Ceylon Cinnamon is great to use when cooking lamb, beef, pork, rice, some chicken and turkey dishes, pickles, tomatoes, onions, corn, cauliflower, black beans, fruits, and in baked treats.
