Cheesy Jalapeno Popcorn
People have been increasingly interested in snacks that deliver savory flavor and heat. We decided to show off the complex, lingering heat of Cheesy Jalapeno Seasoning with some freshly popped popcorn. This blend is cheesy and salty with notes of herbs and butter, and it's got a heat that builds the more you eat.
This popcorn is great with just two tablespoons of Cheesy Jalapeno Seasoning on the whole batch, but three tablespoons drives the flavor through the roof. And this batch is enormous; 3/4 cup of kernels makes at least 20 cups of popped corn, or 6-8 quart servings, depending on how generous you want the quart to be.
1/4 cup neutral-flavored cooking oil
3/4 cup unpopped popcorn kernels
2-3 Tablespoons Cheesy Jalapeno Seasoning
1. Pour cooking oil into a large pot with a tight-fitting lid, over medium-high heat. Toss two kernels into the oil and, leaving the pot uncovered, wait for the kernels to pop.
2. Once the first two kernels have popped, pour the rest of the kernels into the pot. Cover, and shake pan regularly over heat. Shake until the kernels have stopped popping, 2-3 minutes.
3. Pour into a large mixing bowl. Toss with 2 Tablespoons Cheesy Jalapeno Seasoning. Taste, and add more seasoning if desired. Serve right away, or portion into individual servings.
