Dried Scallions, Allium fistulosum, are the green, flaky granules produced from a bulb-less, herbaceous variety member of the onion family. They are also called minced green onion, freeze dried spring onion, dehydrated green onions, chopped dried scallions, bunching onions, or spring onions.
Though they are often called “spring onions” that is a bit of a misnomer, since any onion picked early in the year are also referred to as spring onions. The term “scallion” specifically refers to the long, cylindrical onion that does not develop a bulb.
Dried Scallions are popular with:
- meal kit, frozen food, soup mix, snack, and sauce manufacturers;

Dried Scallions are sweet, punchy, umami, and a bit grassy.
How To Use
Dried Scallions work well in dishes that are cooked slowly, so their flavors ease out into a dish. Try in soups, stews, marinades, or hot and cold sauces. Put in egg dishes like quiches or frittatas. Add to cold salads, potatoes, rice, or as a garnish over vegetables. This product is not recommended for high-heat applications like grilling.
The the other members of the onion family, Dried Scallions can be used in an enormous variety of savory, and even sweeter, dishes. Add to chicken, seafood, tofu, duck, pork, or beef. They also go well with noodles, potatoes, rice, cheese, eggs, butter, and infused oils. They make a beautiful garnish. Pairs particularly well with garlic, lemon, basil, hot or sweet peppers, coriander, thyme, sage, or ginger.
