New Mexico Red Chile Flakes, Capsicum annuum, are mild-to-medium chiles flakes, ranging from 500-3500 Scoville Heat Units (SHU). They are also known as New Mexico red chili, red chile flakes, Mexican chili flakes or New Mexico red chile chips

These New Mexico Chile Flakes come from the Big Jim chiles, a cultivar developed by a member of the Franzoy family—the first family of chile farming in Hatch, NM—in cooperation with the Chile Pepper Institute at the New Mexico State University. Once matured, the Big Jim chiles are dried and then crushed to make the chile flakes. Big Jim chiles are in the Guinness Book of World Records as the cultivar that produced the longest chile pepper ever, recorded at a staggering 17 inches long.

"Bread, Milk, Eggs" This has become the new "Bread, Milk Eggs" for our house. WE must Never be without! We make a mild chili oil with it, a compound butter, and almost all the breakfast eggs have the chili flakes. Flavorful, but not HOT. Excellent "new "addition to the spice shine. Great quality Mild hear, good flavor. Fresh fresh fresh.
