Granulated Lemon Peel, Citrus x limon, is the dehydrated peel of a standard culinary lemon. There will be some pith attached. It is also referred to as lemon peel granules, dried lemon peel granules, or lemon peel zest granulated.
The peel of the lemon is very flavorful, with its network of cells that contain volatile oils that carry the essence of lemon, so it is sweet. Since it does not contain juice it is not sour. This product is made primarily from the outer rind of the lemon, dried and milled to small granules. There will be some white pith mixed in with some of the Granulated Lemon Peel so there will be notes of punchy bitterness.
