Shiitake Mushroom Powder, Lentinula edodes, is a light tan to white powder made of dried, finely milled mushrooms. It is also called shiitake powder, dried shiitake mushroom powder, Japanese shiitake mushroom powder, or powdered shiitake.

Dried Shiitake Mushroom Powder is a shelf-stable product that allows you to incorporate the deep, umami flavor of shiitake mushrooms without worrying about cleaning, chopping, or texture of the final product. One pound of fresh mushrooms will make roughly one ounce of powdered mushrooms.

Pair Shiitake Mushroom Powder with garlic, onions, mint, ginger, chile peppers, tomatoes, thyme, oregano, parsley, spinach, arugula, olives, sweet potatoes, carrots, sugar, turmeric, and black pepper.
