Chicken Parmesan Burgers
Ground meat by any other name is still a burger, when it's shaped into a patty and grilled. This unique approach to the chicken burger allows you to enjoy the richness of chicken parmesan in an easy to make hand-held that doesn't require breading or deep frying. This can be easily batched up to make bigger meals, so if you're looking to feed more than two people, just keep doubling the recipe.
Use your favorite roll to put this on; we love a pretzel roll, but it would be equally at home on a ciabatta roll, a chunk of baguette, or brioche. And use a marinara sauce rather than a sauce with meat. Finally, while we recognize the ease of buying pre-shredded mozzarella we recommend that you buy fresh mozzarella and shred it yourself. It's an easy cheese to shred--you can even just kind of chop it or slice it, without pulling out a shredder--and the meltability of fresh mozzarella is significantly superior to that of the pre-shredded stuff.
- 8 ounces ground chicken
- 2 teaspoons Naples Seasoning
- 1 clove garlic, minced
- 1/3 cup unseasoned bread crumbs
- 1/3 cup plus 2 Tablespoons of your favorite marinara sauce, divided
- 1/4 cup shredded mozzarella cheese
- 8 basil leaves
- 2 pretzel rolls, or your favorite hard rolls
- Preheat broiler. Heat grill to medium.
- Combine chicken, Naples Seasoning, minced garlic, bread crumbs, and 1/3 cup marinara sauce. Form into 2 patties.
- Place on grill and cook for about 5 minutes per side, or until chicken is cooked through.
- Remove burgers from grill and place on broiler pan. Top each burger with shredded mozzarella. Place under broiler and melt cheese until bubbly.
- Layer the bottom half of each roll with two basil leaves, burger, one Tablespoon marinara sauce, and finish with two more basil leaves. Place the lid on top of the sandwich and serve!
