Ground Korean Gochugaru Powder, Capsicum annuum family, is a medium heat chile powder. It is also called ground gochugaru powder, Korean chili powder ground, Goun-gochugaru, or ground Korean gochugaru.

A long ripening time and some sun-drying gives this chili powder flavor that is sweet, but nuanced with a smoky quality.

Ground Korean Gochugaru Powder is often purchased by:

  • jerky, snack, marinade, condiment, dressing, meal kit, artisanal oil, and kimchi and fermentation manufacturers;
  • Korean, Korean BBQ, Asian, and Asian fusion restaurants;
  • gastropubs;
  • cocktail bars;
  • seasoning companies;
  • independent spice shops;
  • olive oil shops; and
  • breweries and brewpubs

We also have Korean Chile Flakes available.

Flavor Profile

Ground Korean Gochugaru Powder is sweet, fruity, and somewhat spicy, with a touch of smoke.

How To Use

Ground Korean Gochugaru Powder is an important spice in Korean cuisine. Use this chile  powder to make a smooth Gochujang Paste, which can then be used to make a mouth-watering Korean Cucumber Salad, or toss paste on Korean Chicken Wings and bake. Blend Ground Korean Gochugaru Powder in when making the spicy vegetable dish Kimchi. Or mix it up in a spicy dressing and enjoy a satisfying bowl of Bibimbap.

This powder is a great addition wherever you would like to add a bit of spice. Ground Korean Gochugaru Powder can withstand a long cooking time, but when it is added near the end of cooking their heat and flavor blooms. Sprinkle this powder on an omelet or over scrambled eggs. Mix with rice. Toss over pasta and add its fruity depth to bold pasta dishes like orecchiette with sausage and broccoli rabe.

Korean Chili Flakes pair well with rice, chicken, fish, ginger, garlic, chives, fish sauce, pork, anise, fruit, celery, and chocolate.
