Summer Savory
Summer Savory
Summer Savory, Satureja hortensis, is a sweet and spicy smelling herb, lighter in flavor than winter savory. It is also known as summer savory spice, dried summer savory, and summer savory herb.
Summer Savory is a member of the Lamiaceae, or mint family, and is indigenous to the Mediterranean region. It is closely related to mint, rosemary, thyme, oregano, sage, and marjoram.
Summer Savory is popular with seasoning companies; independent spice shops, American and bistro-style restaurants; salt manufacturers; and olive oil shops.
Flavor Profile
Summer Savory has a peppery bite with a light, herbaceous flavor and aroma. The taste is a subtle cross between marjoram, mint and thyme.
How to Use
Add Summer Savory to the butter rub when making Classic Roast Turkey, and then stir some into the stuffing on the side. Swap this in for thyme when making Savory Spinach and Mushroom Crepes. Add this to the blend for truly herbaceous Herb Roasted Potatoes. A tablespoon in the pot will give lift to Slow Cooker Pulled Pork. Stir into Sweet and Spicy Herb Roasted Mixed Nuts.
Summer savory is popular in flavored vinegars, herb butters, stuffing and meat pie, and is frequently used with beans, beets, cabbage, chicken, fish eggs, salads, chutneys, potatoes, cheese and in soups, scrambled eggs, and other egg dishes. Pair it with sweet herbs like thyme, sage, rosemary, and lavender, or basics like black pepper, garlic, and onion.
