Herb Roasted Potatoes
To make a simple side dish that's got loads of flavor and can help soak up gravies or sauces, it's hard to go wrong with roasted potatoes. This is a set-it-and-forget-it dish; just toss the potatoes in seasonings, put them in the oven, and go read a book until the timer goes off telling you that they're ready.
This easy to prepare dish is full of flavor, color and texture. Serve these with something that's got lots of juice to soak up, like Honey Balsamic Pork Chops smothered in herbed Dijon pan sauce, or Shkmeruli, a Georgian roast chicken made with a savory milk sauce.

Ingredients:
- 1 Teaspoon Dried Parsley
- 1/2 Teaspoon Greek Oregano
- 1/4 Teaspoon Fine Sea Salt
- 1/4 Teaspoon Black Pepper Coarse Grind
- 1/8 Teaspoon Domestic Paprika (85 ASTA)
- 1 garlic clove, minced or 1/4 teaspoon of California Granulated Garlic
- 24 small red potatoes
- 1 Tablespoon olive oil
Instructions:
- Preheat oven to 400°F.
- Combine the spices in a large bowl and set aside.
- Toss potatoes with the olive oil until coated.
- Add potatoes to the spice mixture and toss.
- Place potatoes on a baking sheet lined with parchment paper.
- Bake at 400° for 45 to 50 minutes or until tender. Stir occasionally.
