Buffalo Maple Sauce
This Buffalo Maple Sauce is a beautiful, sweet and spicy coulis that comes together really easily and is incredibly versatile. We made this as the accompaniment for Buffalo Maple Wings, but we tried it on burgers, black bean burritos, and steak, and it was a winner every time.
2 Tablespoons olive oil, divided
1 large red onion, peeled and chopped into a 1/2 inch dice
2 large red bell peppers, chopped into a 1/2 inch dice
1/2 teaspoon California Roasted Minced Garlic
1 teaspoon Buffalo Maple Seasoning
1 teaspoon pure maple syrup
2 Tablespoons apple cider vinegar
1/2 cup vegetable broth, plus more if needed
1/2 teaspoon Kosher Salt
1. Heat 1 Tablespoon olive oil in a saute pan over medium-high heat, until it is shimmering. Stir in chopped onion and pepper and cook for 2-3 minutes, until they start to soften. Then stir in California Roasted Minced Garlic. Cook together for 5 more minutes, until vegetables have softened and vegetables are fragrant.
2. Stir in Buffalo Maple Seasoning and maple syrup and let cook for 1 minute, then add apple cider vinegar. Scrape up any browned bits from the bottom of the pan and cook for 1-2 minutes, until the sharp edge of the vinegar has cooked off.
3. Put the contents of a pan in a blender. Add vegetable broth to the mix and puree until smooth.
4. Add one more Tablespoon of olive oil to the hot pan, if desired. Pour sauce back into pan. Cook over medium heat until the sauce reduces to the desired thickness.
5. Taste and add up to 1/2 teaspoon Kosher Salt. Serve with wings, burgers, steak, chicken, fish, thin out with oil to make a salad dressing, or mix into mayonnaise or sour cream for a creamy dip.
