Chorizo and Sweet Potato Hash
We love the rich, spicy flavor of Chorizo sausage, which lends this dish its own flavor, protein, and even its own cooking fat, since you don't add any fats to the pan when you first cook the sausage. You can precook cubed sweet potatoes in the microwave, parboil them until they're semi-soft, or use leftover baked potato, cut into cubes.
This was a very quick and easy meal to put together with only 3 main ingredients, a little oil and some spice. Balance it out with a chopped salad or some grilled broccoli for a super-simple and delicious meal that you can have in under half an hour.

Ingredients:
- 1 pound fresh chorizo sausage, sliced
- 1 pound cooked or partially cooked sweet potatoes, diced
- 1 Tablespoon olive oil
- 1 bunch scallions, sliced
- 1 Tablespoon Manzanillo Mexican Seasoning
Instructions:
- Heat a large frying pan to medium high heat and add the sliced sausages.
- Cook for 8-10 minutes, turning occasionally until cooked through.
- Remove from pan and set aside.
- Drain some or all of the sausage grease from pan.
- Add the olive oil and sweet potatoes to the pan. Cook on low for 5-8 minutes, until potatoes are browned and fully cooked.
- Add sausage back to pan and add the Manzanillo Mexican Seasoning and scallions.
- Toss a few times to distribute spice blend and scallions. Serve immediately
