Our Ground Black Pepper, Medium Grind, is pungent, earthy, and resinous, with a bit of woodsy pine and citrus that sneaks in. There is a forward-tasting heat from the bioactive compound piperine, an alkaloid (a compound that contains nitrogen and often generates bitter flavors) that permeates both the seeds of the pepper and the outer hull. Piperine combines with the essential oils in black pepper, that range between 1-2.5% value by weight, to create the assertive essence of black pepper. Medium Grind pepper is on 30 mesh (+30) and is sifted to remove dust.
The spice trade made and broke fortunes in the ancient world, and this was never more apparent than it was in Venice. Situated on the Adriatic Sea, with easy access to Mediterranean trade and at the gateway to overland routes, Venice made lucrative arrangements with Arab spice traders at the end of the 9th century that gave them some control in the pepper trade. By the year 1000 CE, Venice was entrenched as the hub for the pepper trade both through Europe and westernmost Asia. Their grip on black pepper lasted until Portuguese sea captain Vasco da Gama successfully circumnavigated Africa and found a way past Mediterranean shipping lanes, creating easier access to black pepper for the citizenry that had been held hostage to Venetian practices.

Coat a steak in Dijon mustard and Ground Black Pepper for delicious flavor and a biting crunch. The classic Italian dish cacio e pepe is a simple dish of Parmesan cheese and black pepper. Add Ground Black Pepper to fluffy biscuits for a morning treat. It adds great flavor and texture in stir fry, and if you’re in the mood for Vietnamese food, black pepper and sugar are paired to make sweet black pepper fish, an extremely popular dish. The beauty of black pepper (and its many varieties) is that it can go nearly everywhere salt can go, but its spicy qualities pair well with sweet vegetables, like carrots or corn.
