Ground Coriander
Ground Coriander has a light, feathery texture and a lemony aroma when freshly ground, with a flavor profile that is warm, nutty and sweet, with hints of citrus. The key to working with coriander is understanding the wealth of flavors that coriander brings to its recipes. While the flavor is not aggressive, Ground Coriander’s warm citrus notes are noticeable if they are not present. Moroccan-style seeds are the kind we use in our Ground Coriander, and it has such a versatile and amenable personality that it can be found in cuisines throughout the Mediterranean, Asia, Europe, and Latin America. We also provide Indian Coriander Seed, and this seed has a more up-front citrus flavor and deeper warm notes. While still a team player, Indian Coriander seed is much more present in a dish.
Our Ground Coriander is ground fresh to safeguard against the dissipation of its volatile oils and provide you with the most flavorful spice possible. Volatile oils are the chemical compounds that make a spice unique; to make sure the best version of Ground Coriander isn’t squandered in a warehouse, we grind it in-house in small batches, several times a week. To further protect the flavor of ground coriander, we grind our seeds to a coarser grind, which gives the oils more area to adhere to and prevents rapid dissipation.
Tips From Our Kitchen
Ground Coriander’s bright, mellow warmth is a perfect way to round out the spiky edges of chile peppers, so add this to the ranchero sauce you make for your chicken enchiladas. It elevates lime brilliantly, so use in vinaigrettes, or make a lime and ginger gremolata with coriander as an Asian-inspired garnish.
