Cardamom Seeds, Elettaria cardamomum, are the small brown and black seeds found inside the green cardamom pods. They are also called cardamom seed, decorticated cardamom, cardamon seed, cardamum, or cardamom pod seeds.
Papery green cardamom pods are technically a fruit, and the papery pod itself, while rich in flavor, is inedible. Each pod contains approximately 12 seeds, also rich in flavor, that can be toasted and ground or crushed for use in recipes.

How To Use
Cardamom Seeds should be cracked or crushed in a mortar and pestle before use, and to bring out full flavor, toast in a dry pan before using. Cardamom Seeds are a staple in Indian cuisine but can be found around the world. Add them to turkey dumplings, pilafs, meatballs, or pork roast. Cardamom Seeds also shine in desserts, so toast and grind them to add to ice cream or Swedish Christmas bread.
Use Cardamom Seeds when making curries, DIY spice blends, rice dishes, mulled wine and cider, brewing, with chicken, lamb, fish, or pork, and when grilling, roasting, and baking.
Cardamom Seeds work well in combination with caraway, chili powder, cinnamon, coriander, cumin, ginger, paprika, cilantro, garlic, orange, lemon, maple, and pepper.
