Chai Spiced Overnight Oats
Overnight oats are an easy way to eat a healthy, filling breakfast with very little effort. The ingredients can be combined in just minutes, and then they do all the work on their own and in the morning, you can enjoy pulling a ready-made breakfast from the fridge and dressing it with whatever optional toppings work for you.
You can use any kind of oats--steel cut, rolled, or quick-cooking. Almond milk is a great choice but you could substitute that with water, dairy milk, soy milk, coconut milk, or any of the ersatz milks. You can also add in a little bit of unsweetened Greek yogurt to thicken this up.
Serve your overnight oats with berries, almonds, dried fruit, honey, or your preferred choice of topping. This is an extremely versatile recipe that tastes good with so many combinations of toppings that it is hard to limit yourself to just one.
- 2 cups steel cut oats
- 2 Tablespoons chia seeds
- 1 teaspoon Ground Cinnamon
- 1/2 teaspoon Ginger Powder
- 1/4 teaspoon Ground Cardamom
- 1/8 teaspoon Ground Cloves
- 1/4 teaspoon Ground Nutmeg
- 3 Tablespoons brown sugar
- 2 1/2 cups almond milk
- Optional toppings: bananas, berries, nuts, peanut butter, raisins, etc.
- Place oats, chia seeds, spices and brown sugar in a medium bowl and stir to combine. Add almond milk and stir to combine. Cover with plastic wrap and chill overnight. You could also divide this recipe into 4 individual pint jars with lids.
