Chai Spiced Overnight Oats
Overnight oats are nothing new, but for anyone who has never tried them before, you will find that they are so delicious that it is impossible to imagine how you could have survived before them. If you want a healthy meal with very little effort, this is the recipe for you. In fact, combining the ingredients for these overnight oats will eat up less than a half hour of your time and then will do all the work on their own. Of course, you’ll have to wait overnight to eat it in the morning, but who doesn’t love the ease of pulling a ready-made breakfast from the fridge and enjoying it on the spot?
Jeff used individual spices for this, but our Chai Baking Spice Blend would work perfectly if you decided that you didn’t want to use individual spices. He also used steel cut oats, which are the sort he prefers, but if all you have is old fashioned rolled oats, those will work. For your liquid, almond milk is great but you could substitute that with water, milk, or even coconut milk if you prefer.
You can serve your overnight oats with berries, like we did, or you can add almonds, dried fruit, honey, or pretty much whatever you’d like. This is an extremely versatile recipe that tastes good with so many combinations of toppings that it is hard to limit yourself to just one. Throw some dark chocolate chunks in there with those berries for a little extra sweetness. These overnight oats are extremely filling and have a great texture to them. Our taste testers really loved them, but there isn’t much opinion outside of that because it’s really hard to talk when your mouth is full of oats and you don’t want to pause to discuss the food you’re eating.
- Place oats, chia seeds, spices and brown sugar in a medium bowl and stir to combine. Add almond milk and stir to combine. Cover with plastic wrap and chill overnight.
- Serve with optional toppings.
