Brewpub Garlic Mashed Potatoes

Mashed potatoes, with their warmth and creaminess, are a national comfort food, but potatoes inherently run the risk of being a little bland. To help these potatoes become all they can be, we crammed flavor in everywhere we could think of and capped it off with an unapologetic amount of rich, garlicky Brewpub Garlic Fries Seasoning.
We chose Yukon gold potatoes for this recipe because their waxy texture stands up better to the beater blade of a stand mixer than a floury russet potato. We boiled the potatoes in a chicken soup base because there’s something really wonderful about chicken as a foundational flavor, but if you want to make this vegetarian you can choose a vegetable base instead.
3 pounds Yukon gold potatoes, peeled and cut into chunks
2 Tablespoons chicken stock base or 2 cubes of chicken bouillon
3/4 cup half and half
1/2 cup whole milk
1/4 cup butter, plus more to add just before serving
4 ounces cream cheese
1 Tablespoon Brewpub Garlic Fries Seasoning
1/2 teaspoon Kosher Salt
1/4 – 1/2 teaspoon Santa Maria Seasoning, to garnish
1. Put potatoes in a pot and cover with water until it is two inches above the potatoes. Stir in chicken stock base.
2. Bring to a low, steady boil and cook until potatoes are fork-tender, 15-20 minutes.
3. Drain potatoes, and place drained potatoes in a large bowl. Add half and half, milk, butter, and cream cheese. Mash together until ingredients are incorporated.
4. If you have a stand mixer, fit it with the mixing blade and move potatoes into the mixing bowl. Add Brewpub Garlic Fries Seasoning and start whipping potatoes at a medium speed until potatoes are smooth and creamy. If you do not have a stand mixer, continue mashing in your mixing bowl. Add seasoning as above and continue to mash until you reach the consistency desired.
5. Turn off the mixer to taste potatoes. Add Kosher Salt, if necessary, and whip again at medium speed to incorporate salt.
6. Pour potatoes into serving dish. Dot with more pats of butter, if desired, and top with a sprinkling of Santa Maria Seasoning. Serve immediately.
