I am a pancake nut - I love to indulge in a really good Saturday morning stack. However, pancakes can be a diet killer and they really aren't nutrient rich - just rich. Flour, sugar, eggs, buttermilk ….. drooling already. But how do I enjoy one of my very favorite meals without it being so very bad for me?

I have searched healthy pancake recipes, there are so many out there - some tasting more like an old mattress than a fluffy, light, heavenly pancake. Don't get me wrong, I do experiment almost every weekend - some good and some - well … not so good.

But this recipe is super easy, very healthy and you can make the batter is less than 5 minutes - yes, really - I timed it! I had to make them to believe it myself.

Ingredients:
  • 1/2 cup oatmeal
  • 1/2 cup cottage cheese - I use 1% milkfat, but I am sure fat free would be just as good.
  • 1 teaspoon vanilla
  • a couple of shakes of cinnamon or pumpkin pie spice
  • 4 egg whites
Instructions:
  1. Put all ingredients in a food processor or blender
  2. Process or blend
  3. Pour 1/4 cup portions onto a pan lightly sprayed with pan spray
  4. Cook on each side about 2 minutes until brown
