Greek Tacos with Dill Sauce
This is a surprising twist on standard beef taco recipes. We stuffed our seasoned beef into pita pockets, and topped it with a healthy bunch of vegetables and the salty spike of feta cheese. Our Greek taco recipe is one of our favorites and makes its way into the dinner rotation on a regular basis.
Greek Seasoning brings together some favorite Mediterranean flavors into a blend that can be used with chicken, beef, lamb or pork. The dill sauce adds herbaceous freshness with a dash of tang. You can use whatever degree of lean-ness in the ground beef and whatever fat content of yogurt you prefer. Keep the ground meat lean and the yogurt fat free and this qualifies as light and healthy as well as being super quick and easy!
For pita pockets:
- 1 pound ground beef
- 1/2 cup white onion, chopped
- 2 garlic cloves, minced
- 2 teaspoons Greek Seasoning
- 1 1/2 teaspoons Ground Cumin
- 1/2 cup grape or cherry tomatoes cut into halves
- 1 cup fresh spinach, stems removed and discarded
- 6 mini pocket breads
- 1/3 cup feta cheese
For yogurt-dill sauce:
- 1/2 cup plain Greek yogurt
- 1 teaspoon lemon juice
- 1 teaspoon Dill Weed
- Cook ground beef, onions and garlic in skillet over medium-high heat. Stir until beef is browned.
- Drain meat of any excess fat.
- Add Greek Seasoning and Ground Cumin to the meat and blend well.
- Stir in tomatoes and spinach and cook over medium heat 3 to 5 minutes this allows tomatoes to become juicy and spinach to soften.
- Mix ingredients for yogurt-dill sauce.
- Cut pocket breads in half.
- Spoon meat mixture into each bread pocket and top with yogurt dill sauce.
- Top with feta cheese.
Yogurt Dill Sauce:
1. Blend together 1/2 cup nonfat plain yogurt, 1 teaspoon lemon juice and 1 teaspoon Dill Weed
