Za'atar Bread with Tomatoes
This simple bread dish is unbelievably tasty and easy, and is perfect for an appetizer or a no-cook late summer meal. We based this recipe on a traditional Lebanese dish called manakish. Traditionally, manakish looks a bit like pizza and has a heavy coating of seasonings or cheese, but we wanted to change it up a little.
For this recipe, we used thick, crusty French bread we picked up at the market. We sliced it and grilled it for hearty flavor. We put fresh, in-season tomatoes on top of the grilled, toasted bread. Then we drizzled our bread with a little olive oil before giving it a robust dressing of Za'atar Seasoning. The beautiful variety and color of Heirloom tomatoes make a perfect presentation for this tasty dish. Serve with a green salad or some corn on the cob for an easy dinner, or slice bread into quarters for an appetizer.
- 6 slices of coarse bread
- About 1 Tablespoon olive oil - just enough for brushing on the bread
- 6 teaspoons Za'atar Seasoning
- Aleppo Pepper or other red pepper flake to taste
- Coarse Sea Salt and Black Pepper Coarse Grind to taste
- Diced tomatoes
- Brush both sides of bread with olive oil.
- Grill or broil, turning once, until crisp and nicely browned.
- Sprinkle 1 teaspoon of Za'atar on top each slice of grilled bread. Season with Aleppo Pepper or your favorite pepper flakes, Coarse Sea Salt, and Black Pepper Coarse Grind to taste.
- Top with diced tomatoes and serve.
