Honey Peri Peri Sauce
Honey Peri Peri Sauce is a vibrant sauce that is sweet, spicy, savory, and tart. The inherent heat of this seasoning blend is tempered by the honey and the sweetness of the onions and peppers, so this sauce is surprisingly accessible despite the spicy chiles involved.
This recipe can also be made with a conventional Peri Peri Seasoning, though it’s a much less sweet blend and will present a spicier flavor profile.
1 small red onion (1/2 a medium onion, 1 cup), roughly chopped
1 red bell pepper, roughly chopped
1 yellow bell pepper
4 cloves garlic, roughly chopped
1 Tablespoon Honey Peri Peri
Zest and juice from one large lemon
1/2 cup white wine vinegar
1/4 cup vegetable oil
Kosher Salt to taste
1. Put all ingredients except vegetable oil and Kosher Salt into a food processor or blender. Process until everything is thoroughly combined.
2. Pour vegetable oil into the processor with the blades running, until the sauce is slightly chunky and emulsified.
3. Pour this mixture into a pot, and heat sauce over high heat until it comes to a boil. Reduce heat to low and simmer for 20 minutes, or until the sauce is thicker and reduced by half.
4. Remove from heat and taste sauce; add Kosher Salt if necessary.
5. Leave sauce slightly chunky, or puree again to make the sauce completely smooth. Let cool and serve.
