Colombo Powder is a type of curry found on the Caribbean islands of Martinique and Guadeloupe. It is salt- and MSG-free. Colombo Powder can also be called Colombo spice, poudre de Colombo, Colombo seasoning, or Colombo curry powder.

Colombo cooking originated with Sri Lankan servants who were sent to the French West Indies as plantation workers. This curry does not get its heat from chiles like most curry powders do. Instead, its heat comes from brown mustard and black pepper. As a result, it has a sharper flavor and less heat than other Indian or Sri Lankan style curries.

Businesses that frequently purchase Colombo Powder are:

  • Caribbean and fusion restaurants;
  • cafes;
  • catering companies;
  • independent spice shops;
  • seasoning companies; and
  • companies that manufacture snack foods, sauces, and meal subscriptions

Flavor Profile

Colombo Powder is earthy, warm, and peppery, with notes of citrus, maple, and pine.

How To Use

Use Colombo Powder to make a Caribbean-style curry with pork or lamb. Toss over Colombo Curried Grilled Clams. Swap in as the main seasoning when making Spicy Coconut Shrimp. Mix into ground beef for warming, savory Caribbean Spiced Meatballs with Rice. Choose as the main seasoning when making Jamaican Chicken and Mango Chutney Sandwich, or substitute for curry powder and have a milder version of Quick and Easy Vegetable Curry

Choose Colombo Powder when making pork, lamb, chicken, seafood, beef, or chicken. It’s excellent with vegetables, rice, fruits, potatoes, sweet potatoes, winter squash, and yogurt.

Delicious! We fell in love with Colombo de poulet while vacationing in Guadeloupe in April this year. I brought some of the powder home and made several batches of Colombo de poulet and we thoroughly enjoyed the authentic taste of the Caribbean! I eventually ran out of the powder and was very pleased to find it on Spices, Inc. I made my first batch of the recipe last night using your mix and was very pleased at the authenticity of the taste. One note: the sauce thickened up quite a bit more than the spice mix I brought back from Guadeloupe, so I will be adding additional broth to the stew to get the right consistency. I will definitely be buying this again!

So yummy I originally ordered this to make something for my uncle who is from Guadalupe. So naturally I tried making it before I cooked for him... my son who is picky AF loves it. I have only found the one use for it but I will find more soon I promise it’s that yummy.

Need to cook it down As rice flour being the top ingredient, this needs to be cooked down. This won't work as something to sprinkle. Does this remind me of Sri Lankan curry? No, nowhere near spicy enough. Does this remind me of Caribbean spiciness typically associated with Scotch Bonnets? No. I added a lot of minced raw ginger to raise the heat level and that helped.

Colombo spices I was raised in Guadeloupe Island and and in France where Colombo powder is very easy to get, but in the State not so much, I finally found Spices Inc. sells one that is the closest to the one we find in Guadeloupe island! Thank you.
