For this quick and easy grilled chicken sandwich we were looking for some Caribbean flavor to balance the Homemade Mango Chutney and what could be better than our Jamaican Jerk Seasoning. This is a sensational seasoning that makes the ideal jerk chicken! This exotic blend is spicy, aromatic, and a just a bit off the beaten track that in just a short amount of time will allow you to add a splash of fun to your meal. Our salt free Jamaican Jerk Seasoning is hand blended with onion, coriander, garlic, ginger, brown sugar, black pepper, allspice, cinnamon, thyme, nutmeg, scotch bonnet, clove and chives.

For this dish, we used a dry seasoning to coat the chicken. If you prefer, you can make a wet Jamaican Jerk marinade by mixing 1/4 cup fresh orange juice (about 1 large orange), 2 tablespoons of soy sauce, 1/4 cup of apple cider vinegar, 2 tablespoons olive oil, 2 tablespoons of fresh lime juice (about 1 small lime) and 1/2 cup of our Jamaican Jerk Seasoning. This is enough for 3-4 lbs of chicken. We like to marinate for at least 3-4 hours and have marinated for up to 24 hours. Remove from the fridge 30-45 minutes before you plan to cook or grill.

If you're not familiar with Chutney you're in for a real treat. Chutney is similar to salsa but typically with a sweet component. Like salsa is used as a side dish or condiment. The three characteristics of a classic chutneys is a perfect combination of sweet, sour and spicy.  The sweet and creamy chutney spread is a perfect compliment to the spicy jerk chicken.

This sandwich pairs perfectly with our Sweet Potato Chili Fries.

Ingredients:
  • 4 boneless skinless chicken breasts, about 3 oz each. You can cut larger breasts down to the appropriate size, just keep them the same thickness
  • 2 Tablespoons light mayonnaise
  • 2 Tablespoons plain, nonfat yogurt
  • 2 Tablespoons plain, nonfat yogurt
  • 1 Tablespoon mango chutney
  • 4 whole wheat rolls split and toasted
  • 4 fresh lettuce leaves
  • Sliced red onion
  • 2 Tablespoons Jamaican Jerk Seasoning
Instructions:
  1. Pound chicken breasts to a uniform thickness - about 1/2".
  2. Sprinkle chicken with jerk seasoning on both sides and set aside for at least 30 minutes.
  3. Preheat grill to medium high heat.
  4. Place chicken on grill and grill 7 minutes on each side or until no longer pink in center.
  5. Combine mayonnaise, yogurt and chutney in small bowl.
  6. Spread 1 tablespoonful of the mayo mix onto each onion roll.
  7. Place lettuce leaves and then chicken top of mango spread.
  8. Top with red onion and roll top.
