Almond Crusted Tilapia

This is a very tasty and easy to make Tilapia recipe. The almonds and Parmesan cheese make a crispy crust while the Lemon Pepper and California Granulated Garlic give a nice mix of flavors. Squeeze a little lemon juice over the fish just before serving. We served this dish with a side of Spinach Rice which adds a terrific, confetti-like burst of color.

Ingredients:
  • 1 egg
  • 1/2 teaspoon Lemon Pepper
  • 1/2 teaspoon California Granulated Garlic
  • 1/2 cup Almond Meal
  • 3/4 cup freshly grated Parmesan cheese, divided
  • 4 tilapia fillets
  • 2 Tablespoons all-purpose flour
  • 2 Tablespoons olive oil
  • Fine Sea Salt to taste
  • 1/2 cup freshly grated Parmesan cheese
  • 4 sprigs parsley
  • 4 lemon wedges
Instructions:
  1. In a small bowl beat the egg, Lemon Pepper and California Granulated Garlic and set aside.
  2. In a shallow dish stir Almond Meal and 1/2 cup Parmesan cheese until blended and set aside.
  3. Dust fillets with flour shaking off the excess.
  4. Dip fillets in egg mix and press into the almond mix.
  5. Heat olive oil in a large skillet over medium high heat.
  6. Add tilapia and cook for 3-4 minutes on each side, or until golden brown.
  7. Turn the heat down to medium and add Fine Sea Salt to fillets to taste.
  8. Sprinkle the remaining 1/4 cup Parmesan cheese on top of fillets, cover the pan and cook until cheese has melted, about 4 minutes.
  9. Serve tilapia with parsley and lemon wedges as garnish.
