Almond Crusted Tilapia
This is a very tasty and easy to make Tilapia recipe. The almonds and Parmesan cheese make a crispy crust while the Lemon Pepper and California Granulated Garlic give a nice mix of flavors. Squeeze a little lemon juice over the fish just before serving. We served this dish with a side of Spinach Rice which adds a terrific, confetti-like burst of color.

Ingredients:
- 1 egg
- 1/2 teaspoon Lemon Pepper
- 1/2 teaspoon California Granulated Garlic
- 1/2 cup Almond Meal
- 3/4 cup freshly grated Parmesan cheese, divided
- 4 tilapia fillets
- 2 Tablespoons all-purpose flour
- 2 Tablespoons olive oil
- Fine Sea Salt to taste
- 1/2 cup freshly grated Parmesan cheese
- 4 sprigs parsley
- 4 lemon wedges
Instructions:
- In a small bowl beat the egg, Lemon Pepper and California Granulated Garlic and set aside.
- In a shallow dish stir Almond Meal and 1/2 cup Parmesan cheese until blended and set aside.
- Dust fillets with flour shaking off the excess.
- Dip fillets in egg mix and press into the almond mix.
- Heat olive oil in a large skillet over medium high heat.
- Add tilapia and cook for 3-4 minutes on each side, or until golden brown.
- Turn the heat down to medium and add Fine Sea Salt to fillets to taste.
- Sprinkle the remaining 1/4 cup Parmesan cheese on top of fillets, cover the pan and cook until cheese has melted, about 4 minutes.
- Serve tilapia with parsley and lemon wedges as garnish.
