Spinach Rice
Spinach Rice is a great way to add something a little different and healthy to your regular rice side dish. We keep cooked rice on hand so this side comes together in about 5 minutes. We've used brown rice and basmati and both work well with this recipe. If fresh cilantro is not readily available, you can also used dried cilantro.
We used this as a healthy side dish for a Almond Crusted Tilapia dish and it was the perfect compliment. This spinach rice is low in saturated fat while being packed with healthy nutrients.

Ingredients:
- 1 cup of fresh spinach leaves, well packed
- 1 Tablespoon Dried Cilantro
- 1/2 cup vegetable or chicken broth
- 1/4 teaspoon freshly-ground Gourmet Peppercorn Mixer or to taste
- 1 Tablespoon olive oil
- 1/4 cup yellow onion, diced
- 1 cup cooked basmati rice
- Fine Sea Salt to taste
Instructions:
In a food processor:
- Add 1 cup of torn fresh spinach leaves, Dried Cilantro, vegetable broth, and Gourmet Peppercorn Mixer.
- Blend until smooth.
On the stovetop:
- Heat olive oil in a skillet over medium heat.
- Add chopped onion to skillet and saute 3-5 minutes, until just translucent but still have a little crunch.
- Pour spinach mixture into onion. Stir to combine, then add rice. Taste seasonings and add Fine Sea Salt if necessary. Heat thoroughly and serve.
