Dijon Mustard Vinaigrette
Dijon Mustard Vinaigrette is a snap to make and is loaded with flavor. It’s got all of the rich pungency of Dijon Mustard Powder, with a sweet and sour lift and woodsy, lemony thyme. Use a medium-bodied olive oil when you make this dressing; since there are so few ingredients it’s important that one ingredient not overwhelm the others, and an extra-fancy olive oil could easily dominate the flavors. Use this wherever you want bright, fresh flavor. It’s great on main dish or side salads, adds dimension to chicken, seafood, and pork, lightens up cheese fondue, makes a delicious marinade, gives a mustard-y twist to slaw, and can be mixed with a little apricot jam for a glaze.
3 Tablespoons Dijon Mustard Powder
2 Tablespoons fresh lemon juice
1 Tablespoon apple cider vinegar
1/2 teaspoon Mediterranean Thyme
1 teaspoon honey
1/4 teaspoon Fine Sea Salt
1/2 cup olive oil
1. Put all ingredients into a mixing bowl. Whisk together until fully combined.
2. Whisk again right before using.
