Green Goddess Dressing has been around since the 1920s but it really came into its own in the 1970s, with the emergence of California cuisine and its emphasis on fresh, bountiful foods. This dressing is a celebration of bright, beautiful flavors, sweet and savory herbs and tart citrus, with a rich texture of buttermilk and sour cream. It’s like a bottle full of summer.

This dressing is flexible. Use some white wine vinegar if you don’t have lemon juice, or use sour cream if you don't like avocado. The hardest thing about this dressing is letting it sit long enough for the flavors to mingle, and it is certainly better when you give it a few hours in the refrigerator. This is a terrific marinade for chicken breasts or thighs but of course, as a dressing it’s a classic. Enjoy it over your favorite salad or drizzle it over vegetables like Grilled Asparagus. Summer eventually comes to an end but this dressing can help you hold on to the taste of it all year long.

While this dressing can be prepared in just a few minutes, we recommend letting it sit for at least two hours to maximize flavor.

Ingredients:

½ large ripe avocado
¼ cup Green Goddess Seasoning
1 cup buttermilk
Juice from 1 fresh lemon

Instructions:

1. Combine all ingredients in a blender. Blend until smooth.

2. Test for thickness and add more buttermilk or water if necessary to reach desired consistency. This dressing will be thick and almost dip-like, so feel free to add some water or vegetable broth if you want it to be thinner.

2. Cover and put in the refrigerator for at least two hours.

3. Shake or stir dressing before using. Use within two weeks.
