This is one of the easiest side dishes you can make. When you grill asparagus it develops a surprising, savory depth that isn’t evident in the raw version of this vegetable. Asparagus only needs to cook for a few minutes because you still want a bit of snap when you bite into it, and it becomes so flavorful as it cooks that you don’t have to season it until it’s off the grill.

The rich char on the asparagus offers a remarkable contrast to the tart, lemony, herbaceous brightness of Green Goddess Dressing. This dressing can be relatively thick depending on how you mix it. You can keep it thicker for dipping, or thin it out with a little water if you want a more liquid drizzle. Serve this with grilled steak, chicken, or pork, or artfully drape it over a salad with grilled beets and goat cheese.

Ingredients:

1 bunch asparagus
Olive oil or non-stick cooking spray
1 already-prepared batch Green Goddess Dressing
Lemon wedges and fresh parsley, to garnish (optional)

Instructions:

1. Heat grill to high heat.

2. Clean asparagus and snap off any woody ends.

3. Brush asparagus with olive oil or spray grill with non-stick cooking spray.

4. Place asparagus on hot grill. Cook for 2-3 minutes, then turn the stalks. Cook for 2 minutes longer.

5. Remove from heat. Drizzle with Green Goddess Dressing. Garnish with parsley and lemon and serve.
