Apple Cider Sweet Potatoes
This is a slightly different take on traditional mashed potatoes. If you go beyond the sweet potato casserole that's covered with brown sugar and marshmallows, you'll find that these tubers are plenty sweet on their own, and lend themselves to a wide range of savory flavors.
Look for an apple cider that's tart, rather than super-sweet. You just want a little natural sweetness from the cider, so you can also enjoy the fall-friendly coziness that comes from Apple Pie Spice. This spice blend's savory richness deepens the natural sweetness of these potatoes and creates a terrific contrast to the tart apple cider.
- 2 or 3 sweet potatoes (approximately 3 pounds total), peeled and cut into cubes
- 1 1/2 cups apple cider
- 1 Cinnamon Stick
- 1 Tablespoon butter
- 1 teaspoon Apple Pie Spice
- Fine Sea Salt and Black Pepper Fine Grind, to taste
- In a saucepan, combine potatoes, cider and Cinnamon Stick
- Bring to a boil, stir and reduce heat
- Simmer for about 20 minutes or until potatoes are fork tender
- Remove Cinnamon Stick. Add butter and Apple Pie Spice and mash or beat with an electric mixer until potatoes are smooth.
- Taste your potatoes and season with Fine Sea Salt and Black Pepper Fine Grind.
