Green Ajika Guacamole

It’s easy to love guacamole, with its fresh, bright flavors and creamy texture. While it usually takes on a Tex-Mex style flavor profile, we thought the nutty, buttery flavor of avocados and the punchy citrus would be a great background for spicy, earthy, herbaceous Dry Green Ajika Blend.
This blend has roots in the Caucasus Mountains and the countries around the eastern part of the Mediterranean Sea. It is spicy and herbaceous, and puts a fun fusion spin on a much-beloved favorite. If you want a little extra heat, add a dash of cayenne before serving. It is ready to eat right away, but we suggest letting the guacamole sit for 30 minutes with some plastic wrap pressed right on top of it to allow the flavors to develop.
3 avocados, ripe
1/4 cup diced Spanish onion
Juice of 2 limes
Juice from one small orange
1 small jalapeno, diced
1/2 teaspoon Kosher Salt, plus more to taste
1 Tablespoon Dry Green Ajika Blend
1/4 cup chopped fresh cilantro, plus whole cilantro leaves to garnish
Sliced red chiles to garnish
Tortilla chips to serve
1. In a large bowl or molcajete, combine avocados, onion, lime juice, orange juice, diced jalapeno, Kosher Salt, and Dry Green Ajika Blend. Mash until all ingredients are combined, but are still a bit chunky.
2. Fold in chopped cilantro until fully blended in.
3. Top with sliced red chiles and more cilantro leaves and serve with a big bowl of tortillas for dipping.
