Huevos Rancheros with Salsa Macha
Huevos rancheros is a great reason to eat plenty of salsa for breakfast. Sunny-side up eggs are surrounded by all sorts of delicious goodies, like avocado, cheese, and cilantro. Break that up into a few grilled corn tortillas for a breakfast that’s fun to eat, easy to make, filling, and completely satisfying.
While the eggs are traditionally sunny-side up, you can certainly serve this with eggs that are scrambled or over easy, and it’s also terrific with scrambled egg whites or tofu.
1 large pat of butter
2 eggs
Kosher Salt, to taste
2-3 corn tortillas, toasted
Avocado slices, crumbled cheese, and cilantro for garnish
1 Tablespoon Salsa Macha, plus more to taste
1. Melt butter in a saute pan over medium heat. When butter is completely melted, add eggs.
2. Cook until the whites are set and the yolks are still a little soft, about five minutes. Sprinkle some Kosher Salt over the eggs.
3. Lay toasted tortillas on the plate. Place sunny-side up eggs over the tortillas.
4. Arrange avocados, toss cheese crumbles over eggs, garnish with cilantro.
5. Drizzle with Salsa Macha; keep an extra bowl of salsa on the side if desired.
