Falafel Sandwiches are delicious, simple street food that are often dressed with a nutty, creamy tahini sauce and crisp, fresh vegetables, and eaten on the go.

If you've already made a batch of Falafel, then this recipe comes together in a snap, since it's just a matter of putting mixing up some tahini sauce and putting everything in your pita bread.

Ingredients:

Ingredients for Tahini Sauce:

  • ½ cup tahini sauce
  • 3 cloves garlic, roughly chopped
  • ½ teaspoon Kosher Salt
  • 2 Tablespoons olive oil
  • ¼ cup lemon juice
  • 1 Tablespoon Parsley Flakes

Ingredients for sandwich:

  • 1 batch Falafel
  • 6 pita bread
  • 2 tomatoes, diced
  • 1 English cucumber, diced
  • ¼ of a small red onion
  • ¼ cup Parsley Flakes
  • 1 Tablespoon Dried Mint
  • 1 clove garlic, minced
  • 1 Tablespoon olive oil
  • 1 Tablespoon lemon juice
  • Pickles
Instructions:
  1. To make tahini sauce: In a food processor combine tahini and garlic, and Kosher Salt and process until smooth.
  2. Add olive oil, lemon juice, and Parsley Flakes and process until smooth. Set aside.
  3. To prepare falafel salad: In a bowl, combine tomatoes, cucumber, red onion, Parsley Flakes, garlic, and Dried Mint together. Mix well and add olive oil and Lemon Juice. Mix well again and set aside.
  4. Assemble sandwiches. Fill pitas with Falafel, salad, and pickles. Top with Tahini Sauce. Serve!
