Falafel Sandwich
Falafel Sandwiches are delicious, simple street food that are often dressed with a nutty, creamy tahini sauce and crisp, fresh vegetables, and eaten on the go.
If you've already made a batch of Falafel, then this recipe comes together in a snap, since it's just a matter of putting mixing up some tahini sauce and putting everything in your pita bread.

Ingredients:
Ingredients for Tahini Sauce:
- ½ cup tahini sauce
- 3 cloves garlic, roughly chopped
- ½ teaspoon Kosher Salt
- 2 Tablespoons olive oil
- ¼ cup lemon juice
- 1 Tablespoon Parsley Flakes
Ingredients for sandwich:
- 1 batch Falafel
- 6 pita bread
- 2 tomatoes, diced
- 1 English cucumber, diced
- ¼ of a small red onion
- ¼ cup Parsley Flakes
- 1 Tablespoon Dried Mint
- 1 clove garlic, minced
- 1 Tablespoon olive oil
- 1 Tablespoon lemon juice
- Pickles
Instructions:
- To make tahini sauce: In a food processor combine tahini and garlic, and Kosher Salt and process until smooth.
- Add olive oil, lemon juice, and Parsley Flakes and process until smooth. Set aside.
- To prepare falafel salad: In a bowl, combine tomatoes, cucumber, red onion, Parsley Flakes, garlic, and Dried Mint together. Mix well and add olive oil and Lemon Juice. Mix well again and set aside.
- Assemble sandwiches. Fill pitas with Falafel, salad, and pickles. Top with Tahini Sauce. Serve!
