Falafel Sandwich
Falafel Sandwiches are delicious, simple street food that are often dressed with a nutty, creamy tahini sauce and crisp, fresh vegetables, and eaten on the go.
If you've already made a batch of Falafel, then this recipe comes together in a snap since it's just a matter of putting mixing up some tahini sauce and putting everything in your pita bread. If you don't want this as a hand-held, toast the pita and cut it into triangles, then lay everything out on a plate. It makes a quick and easy salad that's fun to eat, with pita triangles as impromptu scoops/croutons and tahini dressing. While it's not as easy to eat it this way when you're on the run, there's no chance of the bottom of your sandwich blowing out.
1 batch Falafel
6 pita bread
2 tomatoes, diced
1 English cucumber, diced
1/4 of a small red onion
1/4 cup Parsley Flakes
1 Tablespoon Dried Mint
1 clove garlic, minced
1 Tablespoon olive oil
1 Tablespoon lemon juice
Pickles
1 batch Tahini Sauce
1. Combine tomatoes, cucumber, red onion, Parsley Flakes, garlic, and Dried Mint together. Mix well and add olive oil and lemon juice. Mix well again and set aside.
2. Assemble sandwiches. Fill pitas with Falafel, salad, and pickles. Top with Tahini Sauce. Serve!
